The palate offers sensations of blackberries, blueberries, and cherries. Thanks to the fine texture of tannins, the body is round and full.

Maturation: min. 12 months in Limited Edition French Oak Barrels Radoux Omega 

Tasting notes: Aged in French oak barrels,  without toasting. Beneath the pink diamond color  hides an aromatic bouquet dominated by shades of  raspberry and strawberry, with a fine touch of vanilla.  The body is round and silky, full of sensations of red  berries combined with a pleasant acidity.

Fumé Blanc

Classification: Dry White Wine

Alcohol: 13%

Maturation: Matured in French oak barrels for 19 months.

Tasting Notes: Aromas of white peppercorn and sweet peppers gently waltz on notes of  chili and Mediterranean spices. The aftertaste lingers, with a zesty  acidity. Over time, Fume Blanc undergoes a metamorphosis, as its bouquet  is finished by nuances of exotic fruit.Castel Mimi's Fume Blanc is  produced in a limited edition – only 1,500 bottles. 


THE GOVERNOR'S BLEND

Tasting notes: A fine wine with notes of plums and saffron. The  palate is complex and offers sensations of  mulberries and currant. The aftertaste gradually  unveils notes of species, coffee and dark chocolate.

Year of Harvest: 2018 


Alcohol: 15.5% 


Maturation: Matured for 28 months in premium oak barrels from the  premium X-Blend series, signed by the renowned cooper  Christian Radoux. Barrels made from 220-year-old oak trees  from the Limousin region in France, planted during the era of  Napoleon Bonaparte, just before the foundation of modern  winemaking in Bessarabia. Additionaly the wine was aged in  the bottle for another 2 years. 


Consumption Temperature: +15°C …+18°C 


Tasting notes: The intense colour of the wine reveals a vibrant and sleek  bouquet characterised by notes of dried plums and cherries, lightly smoky, gradually opening up tertiary aromas of cloves  and tobacco. The taste is rich in sensations of succulent red  fruits, lightly spiced. The body is rounded, defined by a beautiful balance between well-integrated tannins and fine acidity. The finish is long and complex. 


Food pairings:Venison steak, Florentine-style steak, or roast  beef with oven-roasted vegetables.
